You will receive this quest when you read the Gwent: Looking for New Players notice posted on the Crow's Perch Notice Board or the Midcopse Notice Board. You'll also can get it when you play gwent with the baron.
Though you might think it unlikely, even war-ravaged Velen boasted many prominent gwent players. They possessed certain valuable cards which Geralt wished to add to his collection. To do that, he needed to defeat them. The first on his "To Fleece" list: the Bloody Baron.

You will be able to play with the baron until the Return to Crookback Bog quest begins. He uses the Northern Realms deck. Once defeated he will hand over the Sigismund Dijkstra card and tell you about the other players in Velen you can play with.
If you don't manage to play with him and win until then, you will be able to find this card and information about other players in his office later on.
The baron's notes
Oreton boat builder went all-in and got arse-ploughed by Lady Luck. Send men to collect - if he don't have the coin, take his cards.
- Never play with that crazy old bugger from Benkelham again. Maybe he really can see the future - sure saw through my every ruse.
Head to Oreton and talk to the Boatwright.
He uses the Nilfgaardian Empire deck. Once defeated he will hand over the Letho of Gulet card.
Go to Benek and talk to the Old Sage.
He uses the Monsters deck. Once defeated he will hand over the Crone: Weavess card.
When you win a card from one of the two previous players, they will tell you about Haddy. Head to Midcopse and talk to Haddy.
He uses the Northern Realms deck. Once defeated he will hand over the Vernon Roche card and the Eredin - Destroyer of Worlds card.
In the end, Geralt crossed every name off his list and acquired all the valuable cards he sought.
