After completing the Urban Pleasures mission, return to your camp in Shady Belle and talk to Dutch and Hosea, who are arguing about how you should proceed with Bronte.
Before they can rob the Saint Denis bank, Dutch convinces Arthur that they must kill Angelo Bronte. They visit Thomas, a local fisherman, to procure a skiff for the assault on Bronte's mansion.

To begin Country Pursuits you must first complete Urban Pleasures.
Objectives of Country Pursuits
1. Follow Dutch / Follow Dutch to Lagras / Speak with Thomas
Get on your horse and head to Lagras with Dutch.
When you get there, you'll meet a fisherman named Thomas. He also doesn't like the Bronte and will agree to help you get to the Bronte residence from the swamp side when you need it.
Thomas wants to check with his business partner Jules and, along the way, check the traps he has set. Together you will go to the swamps in search of Jules.
2. Follow Thomas / Search the Trap / Investigate the Trap
Follow Thomas through the swamp, checking out the traps twice on the way. The first of the traps will be empty, and the second you have to help pull out of the mud will be damaged. When alligators are passing by, do as Thomas suggests, just stop and wait until they are gone.
After some time, you'll reach the place where Jules should be, but he's not there. You will decide to split up in order to look for Jules more effectively. Dutch and Thomas will go to the left and you will be sent to the right.
3. Find Jules / Beckon Jules
Go towards the area marked on the map and look for light sources. At some point you should notice Jules sitting with a lantern on one of the trees. He hid there when his boat was attacked by a giant alligator.
4. Get into the Skiff / Escort the Skiff to the Dock
Approach the nearby boat.
When Arthur frees the boat, Jules will come down from the tree and Dutch and Thomas will join you.All four of you will get on the boat and you will set off on your way back.
On the way back the boat will hit something under the water surface and get stuck again. Jules will jump into the water to free the boat. After a while something will grab his leg and Jules will disappear underwater.
5. Save Jules / Search for Jules / Return to the Skiff
Note: If you want to earn the gold medal then you have to return Jules to the skiff within 1 minute 40 seconds.
Get off the boat and go towards the place where Jules should be. His head should stick out above the water. If you don't get to him in time, he will be pulled back under water and after a while he will appear elsewhere.
As soon as you approach him, Arthur will take him on his back.
Bring him to the boat as fast as you can.
6. Kill the Giant Alligator
When all of you are back on the boat you will see a giant alligator, the legendary Bullgator, coming in your direction. If you want to earn the gold medal, then you should shoot it at least five times. There is a fair amount of time so you shouldn't have a problem with that.
7. Dress Jules' wound / Stop Jules' bleeding
When the alligator disappears under the water, take care of wounded Jules. Bandage his leg and then press the wound to reduce bleeding.
8. Kill the Giant Alligator
You will continue your journey back to the dock. After a while the giant alligator will reappear. Shoot him until he withdraws again.
When you reach the dock, the other members of the fisherman's family will take care of the wounded Jules and the mission will end.
