In Assassin's Creed Odyssey, Legendary Animals are elite boss-level creatures that you hunt as part of "The Goddesses' Hunt" questline. Unlike regular alpha animals found in dens, these are unique, significantly larger, and much tougher to kill. Defeating each animal earns you a Legendary Pelt, which you return to Daphnae for specific rewards.
